Hello folk! Growing up, I loved the appealing whiteness of rice after it is cooked, so that makes it my favorite as a child. Since I got married, I enjoy easy meals that are fast to prepare for the family and since I found rice easy to make in different styles; for example, you can have it as plain rice with stew paired with plantain, or you can make it as jollof rice, fried rice, and coconut rice, to mention a few, because I believe there are also different cuisines made from rice that I have not tried yet.
Though, there is a downside to my favorite meal that is breaking my heart, which has let me cut down on portion size and the frequency of taking rice, and that is prediabetes…
